Sesame-Honey Tempeh & Quinoa Bowl

I am not vegan, nor am I vegetarian, but I do like to incorporate vegan and vegetarian meals (sometimes whole days) into my diet. I do this for a number of reasons…sustainablity, health, variety, and learning something new. I dislike the term, “meat substitute” and as I said last week about the turnips, I think you are better off enjoying a food for what is has to offer, instead of thinking of it as a substitute for something you cannot/should not have. I have enjoyed tempeh for years, so when it was on sale a couple of weeks ago, I bought two packages and then found this recipe. I made it this week and it was a hit; tasty and satisfying. A couple of hints I have though: it calls for no salt, except for what is in the soy, so I salted the quinoa (while cooking) and the carrots (after tasting.) Also, I would double the carrot slaw next time. If you are allergic or against tempeh, I think this would be good using ground pork, turkey, or chicken as well.

Herbed Goat Cheese and Root Vegetable Galette

As the temperatures go up, our access to root vegetables goes down, so before it gets too hot, why not enjoy the abundant carrots and sweet potatoes that our farmers have to offer. I love this recipe for a lot of reasons: first, it really shows off vegetables that tend to play second fiddle in recipes or are an afterthought in a meal. Second, a galette is like a freeform pie. It is not meant to be perfect looking, but rustic, so if something does not crimp correctly or leaks, who cares; that is what you were going for and third, it uses whole wheat flour and veggies that are really good for you, so… you could consider it (wait for it) healthy pie! 😀

Roasted Vegetables with Pecan Gremolata

It is crunch time; the last shopping week before Christmas, Hanukkah, and Kwanzaa. That means figuring out (if you have not already) what you are going to serve for your special meal. If you are still looking for ideas for a colorful, seasonal, and easy side dish, then this is the one for you. Chock full of nutrition with a little southern spin, plus if you have any vegans coming to dinner, just double or triple, leave off the parmesan and voila, you have a filling dish for all. Whatever holiday you might be preparing for, take a moment away from the hustle and bustle for some quiet reflection and gratitude for the gifts that you have. Winter Vegetable Soup

Its the most wonderful time of the year…also the busiest, plus, old man winter has finally decided to make an appearance, so in between eating making those holiday treats, moving that &%$@# elf around, and enjoying some holiday cheer, treat yourself and your family to a big bowl of this hearty winter soup. It is chock full of winter root veggies, some that family members may not always like, but are really good for them; i.e. turnips and since you blend it all up, they will never know. 😉
